La histamina es una amina biógena presente en animales y plantas, con funciones esenciales en el organismo. Actúa a través de cuatro receptores (H1-H4), regulando procesos como las respuestas alérgicas (H1), la producción de ácido gástrico (H2), la liberación de neurotransmisores (H3), y las respuestas inmunes (H4). Los problemas surgen con el exceso de histamina, debido a una metabolización deficiente por el hígado o una baja actividad de la enzima DAO en el intestino. La histaminosis, o intoxicación por histamina, puede ser exógena (por ingesta de alimentos con alta histamina o déficit de DAO) o endógena (por liberación excesiva debido a reacciones alérgicas o respuestas inmunológicas crónicas).

Problems arise with excess histamine, due to poor metabolism by the liver or low activity of the DAO enzyme in the intestine. Histaminosis, or histamine poisoning, can be exogenous (from the ingestion of foods with high histamine or DAO deficiency) or endogenous (from excessive release due to allergic reactions or chronic immune responses).
